any one got a brine for goose either for bbq or smoking
Yes I DO. Brine your goose in Coke. The sugars inflate the cells nicely and it imparts a subtle coke flavor. I also cook the goose breasts as a bound roast in a bread pan (3x5x9 in.) covered in real maple syrup. Yes I have a sweet tooth. This sweet and smoked together is a good combination.
Joel that sounds good, have you ever thought about Dr. Pepper?
2 cups brown suger
2 cups non-iodined salt
Mix the above with hot water till it is transparent
1 cup der white wine
1 tablespoon maple flavo
1 tablespoon of worshchestershire sauce
1 chopped onion
Put the goose/geese in a cooler
cover with the above, add water as needed
throw on ice and let set overnight
Smoke over Hickory Coals, using Apple Juice and Beer in the water pan
anyone ever tried this im planning on smoking a whole goose and following this recipe i too have a sweet tooth and thought maybe more people would eat it if its sweet oh and im looking for smoking times i was thinkin about 3 3.5 hours is this correct or no let me know what you think
