Can't taste like duck

    I know a guy who used to do that with swan. The restaurant made up about 5 different dishes with it. 20 people ate.

    butterfly the breasts, cover with 8 oz milk with a tablespoon of apple vinegar (makws buttermilk) add saltwater to cover all the breasts.
    Let set in the frig a couple hours, pour off and recover with same again and set in the frig some more.
    Take out, rinse and towel dry.
    Rub yellow hot dog mustard over the breasts, roll in seasoned seafood breader.
    Deep fry in 325 degrees oil. They'll go like popcorn chicken :D

    Iffin' you and your GF eat fried foods then take some duck breast and slice em about 1/4" thick get your cooking oil real hot and roll the pieces in orange marmalade, then some flour(seasoned flour if you got some) and quick fry em.
    It will make a believer out of her.

    i dont know what you are using, i dont know what types of ducks you have, buy if you want to make the duck taste good heres what you do. first off skin the duck, take it all off. then, take any fat off, then breast it out( if it is a diver) the bones help make it taste gamey. then get a container of water and put in atleast a cup of salt for a brine, add onions, and three cloves of garlic crushes(smashed). let sit for three days. then come see me.

    Be sure to start with a mild duck like GW teal or young mallard,etc. Buffleheads and GoldenEye aren't a good choice.

    season with gound sea salt and gound black pepper (both sides)

    pan cook them in butter to rare to medium rare.

    overcook and it's a stronger flavor.

    if she doesn't like medium rare meat, it's a lost cause.

    serve with a fruit sauce.

    I use a reduction of chopped dried cranberries, marmalade jelly and either a little chicken or beef stock to thin it out.

    also,MAKE SURE YOU REMOVE ALL THE SHOT!!!!

    nothing ruins the experience quicker then to bite down on some steel shot.

    if she still doesn't like it, invite the rest of us over for dinner.;)

    I've fixed duck a couple of different ways but this is her favorite!!

    1 cup flour
    1 cup Bisquick
    Lemon Pepper
    4-6 eggs
    Bacon

    Mix flour bisquick and Lemon Pepper together. Cut breasts into chunks or strips. You can leave them whole but takes longer to cook. Dip into eggs then flour/bisquick mix. I prefer to cook bacon in skillet then take it out and eat it while i'm waiting. Or you can wrap around whole breasts. Throw in bacon grease and cook to med maybe med well. Enjoy:tu

    Soak them in butter milk as stated above it works really well.:tu

    Try soaking it in Evaporated Milk over night, this will take allot of the blood out of the breast:tu
