Cast Iron duck

    Cast Iron duck

    Marinade:
    1 cup soy sauce
    1/2 cup olive oil
    1/4 cup Orange juice
    Several shakes of Tabasco (the more the merrier)
    1 tablespoons honey or maple syrup
    1 tablespoon red pepper flakes
    2 cloves crushed garlic
    Blend really really well (blender, or one of those hand held blender things)

    Marinade 6 breasts (or as many as you have) 24-36 hours in Zip lock baggie.

    Cook 6 pieces of bacon in cast iron frying pan,
    remove bacon from pan (DO NOT EAT BACON), keep fat in pan and fry the
    duck breasts in fat with one chopped onion.
    Cook until breasts are medium rare, and the onion is translucent (clear).
    Serve breasts topped with onions, and bacon.

    After you were done frying the breasts, saut? wild mushrooms in the pan until soft. Deglaze the pan with some half-n-half, thicken it with corn
    starch to finish with a gravy.
