1/2 lb. salt pork, diced 4 lbs. catfish filets, in bite sized pieces 4 lbs. Irish potatoes, peeled and sliced 2 medium onions, sliced salt, pepper, and hot sauce, to taste water Slowly brown salt pork in a dutch oven or stock pot(be careful not to scorch). Remove cracklings. Put in layer of catfish, then potatoes, then onions. Continue layering ingredients to the top. Sprinkle with salt and pepper, and add some hot sauce. Add water to within 1/2 inch of the top layer. Bring to a boil, cover and simmer SLOWLY for at least 3 hrs. Serves 8. Note: Some folks like to add a layer of fresh sliced tomatoes for the top layer. It's o.k., but not traditional.
