Cooking sandhill cranes

    I've heard that cranes are excellent eating. What would be the best way to cook them? Like a goose? Roasted, boned out, skin on or off?

    Most of the ones I have had, have been roasted just like a goose is done to MR!!!! You will have some that are tough at times just like a goose! The ones I have had, taste just like the dark meat of a turkey!:grvn

    I hunted Texas and the Chef had soaked the breasts in soy & teriyaki sauce half & half with a lemon cut in half squeezed the haves into the bag refer over night slice in 1/4" strips olive oil in frying pan with butter too med heat 3-4 mins each side and wa la good luck:tu

    Soaked overnight in buttermilk, sliced thin and chicken fried:tu

    Also marinated overnight, sliced medium and cooking with some olive oil like a steak to medium rare. :bow
