Deep fried duck or goose fingers

    Slice breasts lengthwise into 1/2" strips.

    Marinate strips in a ziploc bag for 45 minutes (or longer) with equal parts soy and worchestershire along with garlic powder and dried onion flakes.

    Liberally season flour in a seperate bag with your favorite Cajun or Creole seasoning.

    Take strips directly from marinade and coat with seasoned flour mixture.

    Deep fry in vegetable oil until floating and golden brown. Takes about 3 minutes depending on oil temp.

    I just randomly hit this concoction one day trying to figure out a quick way to cook a bag of ducks up while we were painting decoys. Outside the time marinating this is the simplest, fastest way I've ever cooked them and they come out outstanding every time. My 14 month old threw a fit the other day when they ran out. :l She and the wife love them... and normally the wife won't touch a duck or goose.

    i tried this on 4 mallard breast this weekend and all i have to say is, " make sure to get what you want to eat before you put them out" man the kids wore them out! :tu thanks

    A good addition to this recipe is to roll each finger in a slice of bacon and put a toothpick through the bacon and duck to hold it together. Then dip in a batter made with 1 egg, a cup of milk, a white onion pureed in a blender, then roll in flour and deep fry it. You will then be deemed the "Duck Cooking God" of the house and camp.

    Here's anothger deep fried recipe--marinate duck strips in LA Hot SC for 2-3 hrs--then drain but do not dry--put it zip loc with a mix of br crumbs, mash pot flakes, and sm bit of flour. Shake them around and then deep fry-- if brave serve with more hot sc on side.leaving some sc on strips with make them only partially crisp-- more like sweet & sour pork-- but very nice
