Soak in buttermilk for 24 hrs, rinse them, season with Onion and Garlic powder, rubbed Sage, Salt and Pepper and some Cajun poultry rub. Prepare your Jalapeno's, halved and gutted. Cook some bacon about half way done, slightly crispy and still pliable. Save the grease and lightly brown the Dove breast in the grease. Your Cream Cheese should be room temperature for easy spreading. Slap some Cream Cheese in the halved Jalapeno, I sprinkled some grated Parmesan Cheese on top of the Cream Cheese, lay your breast down and Bacon wrap them for the grill. Grill until the peppers are charred lightly and the bacon is cooked to your liking, think I cooked mine on low heat for about 20 mins... Absolutely delicious, no gamey, wild taste, only amazing flavors blended together very well. Will do this again later this year for the later part of the season.
