I hope this hasn't been already shared. Saw this for doves, tried it for ducks. Worked great. Cube your ducks into 1.5-2inch cubes. Butterfly them. put a jalapeno slice and a pinch of shredded cheddar chese in there. shut it and wrap it with bacon. Stick a toothpick in to hold the bacon in place (whole slice) put all the prepared pieces in a flat bowl, and marinade with a 50-50 worchesire soy blend. let it sit half a day, and turn the pieces once. The bacon soaks up the sauce. Lay them on a medium grill, and lay a piece of foil over the top, to retain moisture. Cook til bacon crisp on both sides. Dip them in spicy mustard or horseradish, whatever you like. Warning. Very addicting. Buddies will eat them cold the next day in the blind.
