Duck Parmesan

    Breast ducks, horizontally fillet them into 3-5 nice thin patties. soak in milk over night. You can repeat as desired. (Don't slice them into chunks. Fillet them so they are thin).

    pat dry, Mix an egg or two, dip each fillet into the egg. Then dip into a mixture of Bread crumbs and Parmesan cheese. (I like trying different flavors of bread crumbs Italian etc. . .) Then fry (1 inch of oil) in a skillet 2min per side. don't burn it. place each piece on a paper towel to dab off the excess grease. then place in a glass baking dish sprinkle mozzarella cheese all over it. Place in the oven at (preheated) 375 degrees for 15 min. while it's baking cook up spaghetti. get your favorite spaghetti sauce (Prego, Ragu etc. . . and when it's done it's a meal fit for a king. I like the sauce all over my duck and spaghetti.
