Duck pepperoni ?

    I've been using Spice N Slice seasonings to make venison sausage and pepperoni the last couple of years. It turns out pretty good. My venison burger is mixed w/ some pork.

    I'm wanting to try to turn my divers into pepperoni sticks, but am wondering if I would need to mix the ground duck meat w/ pork to keep it stuck together or would just plain ground duck meat have enough fat to keep stuck together?

    The best sticks I've tasted were an even mix of duck, beef, and pork. Not mine and I don't know who did them (they were done by a processor), just an honest review from someone who eats a lot of duck sticks and jerky.

    When I do them I always add 20% pork to the duck. Matter of fact the instructions on the box say too. They are damn tasty.

    I have yet to do the pepperoni but really would like to. I have thought about making salami..anyone tried it? I just do a snack mix. I use 15lb goose 10lb port trimmings. It turns out really good.
