Duck Stir Fry

    Stir fry
    2 goose breast fillets or equivalent duck fillets
    Marinade:
    1/4 Cup soy sauce
    2 Tbsp olive oil
    2 Tbsp orange juice concentrate
    1 tsp vinegar
    2 tsp onion flakes
    1 tsp crushed red chiles
    1/2 tsp cinnamon
    1/2 tsp ground ginger
    -----------------------------------
    Broccoli, Celery, Carrots, Bell Peppers, Onions
    1 can sliced water chestnuts
    3/4 cup peanuts
    2 Tbsp orange juice concentrate
    Basil
    ------------------------------------
    1-1/4 cup long grain brown rice
    3/4 cup whole wheat kernels
    ------------------------------------
    PREPARATION:
    Slice the meat in strips, with the grain. Pour marinade over it and let sit for
    an hour, stirring occasionally. Slice the vegetables and set aside.
    Stir fry:
    Drain most of the marinade from the meat. On high heat, brown the goose meat
    in a wok or large frying pan. When brown, set aside in a warm oven. Saute the
    vegetables in the same wok or pan. Return the meat to the wok and simmer until
    vegetables are cooked but still crisp.
    Grain:
    Add the rice and wheat to 3 cups of boiling water. Turn heat down, but high
    enough to maintain a good boil. Simmer for 25 minutes or so. Drain excess
    water off if desired.
    Serving:
    Spread a layer of grain on the plate, then pile the vegetables
    and goose meat on top.
