Dutch Oven Duck

    Cooked this for poker night recently and everyone said it turned out great so i thought i would share it. it would work well with whole duck but i used what i had on hand - hope you like it

    Dutch Oven Duck

    6 whole duck breast still on the bone - skinless
    Marinate overnight in pineapple juice - 6oz can
    6 breakfast sausage patties – cook then break into large pieces
    1 large Vidalia onion - diced
    1 red bell pepper - diced
    1 green bell pepper - diced
    1 large package fresh mushrooms – cut into thirds
    2 tablespoons kitchen bouquet
    1 tablespoon Worcestershire
    1 qt Swanson beef stock
    1 can chunky Rotel diced tomatoes
    2 tablespoons corn starch
    Salt and fresh cracked black pepper to taste – did not use much of either

    Cook sausage in Dutch oven and remove from pan
    Brown ducks in the oil left from the sausage – remove duck
    Place half the onion in bottom of pan
    Put ducks on top then add the rest ingredients except the mushrooms and corn starch.
    Bring to a boil then simmer for 1.5 to 2 hours. Check every 15 to 20 minutes and baste the duck with stock if needed. Mix the corn starch with a little water and add it along with the mushrooms and simmer another 30 minutes.

    Serve over wild rice!
