Looking for a combination of short & long term fruit trees for deer & bear. I'm thinking Apples, Pears, Persimmons, & Fig (?) trees. We can't bait in VA so this is the next best thing. Any types of Apples or Pears in particular? Any other trees I should consider planting?

I'm not far south of you.
I'd look at the common apple or the Arkansas Black. The latter does fairly well with no pesticides. Persimmon is a good way to go as well; don't know much about varieties.
Pear are good; be careful which varieties you plant as the popular northern/European varieties are susceptible to fire blight down here.
I have seen figs do VERY well down here; I know nothing about them.
Consider: oaks trees for the acorns. Also Dunstan or anther resistant variety of chestnut tree.
