Goose breast in the fridge?

    I have had some geese soaking in salt water in the garage refrgerator this is day 8. Some of the meat was exposed to the air. I meant to put them up sat. and had a crazy weekend and forgot them. They still smell like goose just want to make sure they are still good. Thanks for the help

    They are ok. I hang all of my birds outside whole for 3-5 days before skinning them and then they spend another 3-5 days in the fridge. Number of days depends on how much I get to hunt and how many birds I am getting, good hunting means less days so I can keep under possession limits. :l

    They'll be fine. The fridge pulls moisture out of any meat that's above water is all. It will be just fine. Kind of like an aged steak.

    Just cut the parts that look like leather that were exposed to air off and toss 'em - the rest will be just fine for sure.

    I wouldn't toss them. Just because they are a little dried out looking. If you marinate them you'll never be able to tell anyway. I never cut out that dried meat

    You salt them that long? Are you going to smoke them?
