IMHO ground meat made into jerky is horrible. Partially freeze the breast so it has some rigidity to it and then slice to about 1/16 - 1/8 by hand or with a deli slicer. Freezing it a bit makes it 1 millions times easier to slice by hand. I use a modified version of this RECIPE ... modified based off of what is in the cupboard at the time ... and let it marinate in the fridge for 2 days. Then I use a really fancy sunbeam dehydrator I paid 15$ for 10 years ago at Walmart. The results are fantastic and even non hunters at work beg me to bring it in, etc.
