Got some fresh tomatoes (the first ones of the year)from the garden what else do I need besides rolls? I've never made them, do you grill or fry the shrimp?

Toss shrimp in a little tequila, honey, lime juice, oil and fresh garlic and grill fast on high heat! Simple and not overpowering, hint of tequila and a lil pop of citrus!

Would work fine for me. Wouldn't kick it out for substituting oysters, either.

Blackened or fried. All that other stuff is just not a Po'Boy.

Po Boy is pretty easy. It’s just authentic French bread + deep fried seafood + whatever fixins you like (tartar/cocktail/mayo, lettuce, tomato, onion, pickle are common)

Much fresh water has loaded the shrimp and oysters with vibrio and flesh eating bacteria. Its the "secret ingredient" in poboys these days. Bon Appetit!
