    I'm not from there but I do know a good bit about it, love to fish there, love Nola etc.

    I have heard of Jacobs and by God if I hear it enough I will drive there to get me some.
    I did'nt hear that!
    Dammit these sausage people.
    I HAVE made my own and I still aint quite above it!

    Rabideaux's is pretty darn good!..... I tried some a while back and had to get more. The only issue I had with it was bone fragments in some of the sausage links the first 3 of the 4 times I've had it. Not a big deal for me, but some are turned off when they hit a hard chunk in their food. I had thought of calling em and mentioning a little QC might be in order. I can understand one every now and then, but 3 out of 4 was a little much. Although, I may have purchased sausage from the same batch, as it was from the same retailer, every time....... I will eat more!!

    A while back I had a few packs with the same issue, which was unusual(been eating their stuff for years) but after that batch it's been fine. They must have fired that guy.
    I keep hearing about Jacobs, gonna have to make a road trip one saturday and load a cooler.

    All this talk about Gumbo, got me hankering for some. I had some leftover roast turkey, so I made a batch of turkey gumbo tonight......


    put the turkey bones, and neck in the crock pot for about 10 hours

    medium roux

    Add 1/2 of the onion

    Add okra

    [​IMG]





    Add Stock
    [​IMG]Add layers of trinity every 30-45 minutes.......repeat

    Cut Sausage ( % sticks Chaurice, 1 Sticks smoked sausage)

    I took a lead from Benny, and rendered the fat from the Sausage.. then added to pot.

    Add Green Onions

    I should have cooked the roux a little more, but was in a rush to put this on the table for dinner after work. Probably the smallest batch of gumbo I can recall ever making.

    Looks good! Roux is light but I found out turkey is good with a lighter roux. That kind of rice only needs 15 minutes but it looks OK! :tu
