How do you get the duck taste out of duck!!??

    I have tried what seems like every recipie and marinade under the sun for ducks and they all taste like swamp to me.....Anybody got any suggestions??:confused: :cry

    why would you want to get the duck outa duck?
    I use a product called Daddy Hinkle's out of Oklahoma.

    Allegros game tame is good I've heard but I think it has more to do with your preperation. I'm assuming your over cooking them if they taste like swamp. I love me some duck but overcooked duck is not good at all :fp

    Don't cook Mergansers ;)

    Seriously though, if it's a good duck and you're talking about a liver taste, you're over-cooking them.

    As already mentioned duck or goose needs to be pink or better yet still red in the center and eaten as soon as you can off the fire. The longer it sits the tougher it can get.

    I use Dales or Moores sauce, both are basically a soy sauce based product. I also like the Allegro game tame cajun, it has the orange label. Some others to try are margarita mix and pineapple juice.

    Ditto on the above, hot and fast. Still red in the middle. I made chili out of goose chunks once, that was really good. Also, gumbos are good for duck and goose. Any waterfowl cooked in a crock pot turns out just awful for me, not sure why but it does something to the meat that I don't care for.

    I can send you the ones with 9 pellet holes in there....Don't break a tooth on those lead 2's though!....JUST KIDDING
