Italian Duck on Stuffing

    Rip up 4/5 slices of whole wheat bread
    4tbls melted butter
    1/2 cup diced onion
    2 tbls parsley flakes
    1/2 tsp thyme
    salt and pepper to taste

    Combine all above ingredients and place in a greased 9"x13" glass baking dish

    Get 10 duck breasts and lightly pound both sides and then add salt and pepper to taste
    Place duck breasts evenly flat on stuffing.
    On each duck breast in this order place 2 fresh sage leaves, a slice of parmesan cheese and prosciutto to just cover each duck breast. Salt and pepper the top.

    Preheat oven to 375 degrees
    Bake uncovered for 25-30 mins depending on oven. Cook duck breasts med rare.

    Old old thread, but I had to dig this up and say what a great recipe!! :tu My old man hates duck (dark meat in general) but he ate it and said it was the best duck he ever ate :tu :D

    I love this forum! Can't wait to kill some more greenheads tomorrow and try out some other recipes I sniped from here! Keep this area going :grvn

    The only differences I made: Cooked all the way through (no med rare in this house). And next time I'll be using ground sage, as the leaves were a tad overpowering! Awesome!!
