Jalapeno Duck

    Ingredients
    14-18 large fresh whole jalapenos
    1 package of philly cream cheese
    4 duck breasts
    brown sugar
    bacon

    Cut duck breast up into 1/2"x 2" strips and pound flat
    Cut the jalapenos in half and remove the seeds.
    Fill cavaty half full with cream cheese.
    Place peice of duck on top of the cream cheese
    Place piece of bacon on top of the cut (cut bacon to cover the whole jalapeno)
    Put a sprinkle of brown sugar on top of each piece of bacon

    Preheat oven to 375 degrees
    Cook 10-15 mins

    Change oven over to broiler
    cook untill bacon is done

    I would recommend using a roasting rack with verticale slits in it that way the jalapenos stay in the upright position and also the drippings from the bacon fall into the pan not your oven.

    Its a basic reciepe that has been used many times but this one is quick easy and delicious. just wait for them to cool a little and cut in half and enjoy.
