Mushroom/duck sauce

    1 large duck breast, or 2 or 3 teal. Fillet, cut into 1-2" pieces and marinate for and hour or so in Italian Dressing (or any marinade you like).
    Place meat in medium size frying pan.
    Brown in butter, olive oil, and 1/2 cup red wine. Set duck aside. Leave juices in pan.
    Chop half cup of fresh mushrooms,1/2 red pepper, 1 stalk celery, 1/4 yellow onion.
    Using the same pan, add 3-4 tablespoons approx of cooking oil and saute vegetables. When almost done add duck and cook for another 2 or 3 minutes.
    add 1 can cream of mushroom soup mixed with 1/2 can of skim milk.
    Bring to a boil, turn down heat, and stir until mixture takes on a light brown hue.
    Salt and Pepper to taste.

    Spoon over rice, biscuits, fried porkchops, chicken breast etc..etc....or just eat it like a rich soup!
