NE Goose Hunt

    I love goose legs (leg & thigh) cooked using the recipe for Lamb Shanks in the Joy of Cooking cook book.

    Nice hunt also....if you turn around real slow you might get a few that are behind you...

    When I least out geese I save the legs, make a great stew.

    I agree. I do the same thing with my honker legs. Carrots, onions, celery, beef stock, worcestershire sauce, bay leaves, a little garlic. Let cook for 3-4 hours then add pearl barley. Let cook another hour or so. It turns out great.

    You guys that are stew fans would love the Lamb Shanks approach to goose legs.
