Orange Marmalade and Sweet Onion Western Ribs 1 Package of Western Ribs Rub: 1 Tbs Ground Thyme 1 Tbs Ground Rosemary ? cup Brown Sugar 2 TBS orange marmalade 1 TBS ground black pepper 2 TBS minced Garlic 1 TBS Salt 1 TBS Pepper 1 TBS Parsley 2 TBS Paprika 2 TBS Balsamic Vinegar Glaze: 2 Sweet Onions 1 cup Orange Marmalade 1. Mix rub ingredients together. 2. Apply to Western Ribs, cover and place in the refrigerator for 2 hours. 3. Preheat oven to 350. 4. I use 2 roasting pans that nest inside of each other. I put a few cups of water in the bottom of the larger one and put the smaller one inside. Place the meat inside of the smaller roasting pan and cover the whole thing with the large lid. Basically I don?t have a broiler so I use this in it?s place. 5. Bake on 350 for 3 hours or until it is very tender. I like mine to fall apart. 6. Saut? the onions in butter until it is clear. Add Marmalade to onions. 7. Pour the glaze over the meat and roast for another hour. You can also grill or fry at this point depending on how you intend to serve this dish.
