    We had 9 or 10 ducks in the freezer and one goose. So, we got a half dozen ducks out and

    ground them into Duck Burger. Mixed the duck burger with an equal amount of Kobe Beef Hamburger.

    So for Thanksgiving, Nami will make a big ball of the meat and cover the whole thing with a couple or three inches of dressing and roast it.

    We did this last year and it’s unbelievably delicious.

    I cooked a wood duck Saturday night over very hot charcoal. Skin on, rare with some rub about an hour before. Those that complain about the strong flavor of duck apparently have not eaten it using this simple technique. It was fantastic!
