Pheasant pizza from ladyduckhunter..

    One store bought crust (I used a Rustic crust thin style) or make your own
    olive oil
    1 whole pheasant breast
    unsweetened applesauce
    dried cranberries
    grated cheddar cheese
    1 cup white wine
    1/2 cup walnuts broken into smaller pieces
    2 tbs sherry
    1tbs butter

    Cut breast into small cubes. Saute over very low heat for 2-3 minutes. Add wine, sherry, salt and pepper. Simmer over low heat until wine is reduces by at least half.

    Rub crust with thin coat of olive oil. Smear crust with thin layer of applesauce. Spread pheasant pieces over crust. Sprinkle with cranberries and walnuts. Spread grated cheese over all. Bake for 8-12 minutes (or follow crust package directions).

    Enjoy with you favorite white wine.

    Yummy additions would also be caramelized onions and sauteed mushrooms.
