Question about refrigerated duck meat

    I killed a limit of duck in Mississippi this past Sunday morning and immediately breasted the birds out. They sat for several hours soaking, then bagged them up in a ziplock bag and have either been in ice or the refrigerator ever since. Is it too late to soak them and prep them for the freezer? I normally don't waste meat like this, but due to a family emergency, I had to go out of town and just got back home this afternoon.

    Nope. If they smell funky, then scratch that. Otherwise, they are fine.

    I dry age mine in the fridge for 7 days. No game taste and very tender.....
