Recipes for geese

    I confit the legs, and make snack sticks with the breasts. Substitute the beef with goose breast in your favourite snack stick recipe. Most people can't believe it is goose.

    Used to primarily cook breast in crock pot, shred and add barbecue to make goose bbq. Now I make jerky out of 99% of the goose we kill. slice partially frozen on electric slicer and marinate for a day or two in what ever jerky seasoning your prefer. I rotate between store bought jerky seasoning mixes which I always doctor up and occasionally blend up my own blend. we eat jerky like chips and it is easy to carry and snack on anywhere. with the cost of store bought jerky and wonder where the meat comes from so I like to make my own at a reasonable cost and great taste. It has been many moons since we had one picked and cooked in the oven. No matter what we tried to do they always came out gamey, and dry.
