Yesterday for the first time this season I actually got into mallards. A limit in 5 minutes was way cool! Recipe is as follows. 1 or 2 whole ducks, plucked and singed Tony Chacheries Creole butter injection and marinade 5-6 carrots One small onion, whole. Chili powder Brown sugar. Take the duck and inject liberally with the marinade. Don't be stingy! Spray a glass baking dish with spray oil Place duck in dish. Sprinkle liberally with chili powder. I also sometimes sprinkle ground red pepper too. Then cover the bird with brown sugar. I really cover them up! Place the onion in the bird Cover with foil if no lid for baking dish. Bake at 450 for 45-50 minutes, no more! Let stand for a few minutes then slice and serve. Not to worry, no leftovers with this one.! I have 3 more ducks to cook. May do all at once and invite unsuspecting pastor and wife to dinner!!!
