Roasted Pheasant

    This works best with awhole bird
    Soak cleaned bird in lightly salted water till blood is leached out. (may require several water changes)
    Rub bird with Morton's Sugar Cure Hickory Bacon Cure
    Store bird in zip-loc over bight in frig
    Rinse bird and towel dry
    Rub bird with olive oil in and out
    Sprinkle bird with Lowery's Seasoned Salt
    Gently apply garlic powder to outside of bird
    ADD 2 CUPS OF WATER TO A HALF PAN
    add 1 table spoon of liquis smoke to water in half pan
    cover half pan with grate or place three skewers through bird to support bird over half pan
    Cover and seal bird inside half pan with aluminium foil
    (be sure that the pan is sealed so that all steam surrounds bird and does not get away)
    Place in 350 degree oven/grill for 35 minutes...................

    Optional
    chop a couple mushrooms and add to water
    add 1 cup raw rice, stir and cover pan as above
    have fun !!
