I would try it out with Duck brest shot this week end on the Snohomish river in Washington St.
Glad I dropped in to get in on this with only 2 1/2 hours left.
My pal and I are gonna make some Venison sausage soon and it would be a great time to try out this new toy.
When I smoke I thorw everything but the kitchen sink into the smoker. Smoked Mozzarella (sp?) is always a nice addition. A couple of turkey legs are nice if you have some extra room too, ya just gotta keep an eye on what might drip on something else when you use two racks.
