Smoked salmon?

    Air drying it forms the highly technical cooking word, pellicle, layer. Having this layer "seals" the meat from getting too dry in the smoker. As said above, a classic exterior:nutz

    put door on, but leave a gap on top and bottom for a cool smoke it will sit perfect even with the chip pan in

    The best part of the fish....smoked salmon bellies....gonna be back killing them in about 2 weeks , cant wait
