IMO, this is the best way to cook ducks and geese. Perfect almost every time.
I didnt read the entire post and im not sure if it was covered, but if you can leave the skin on the breasts
The skin with a knife thru to the meat. Duck fat is your friend with this cooking method.
Everyone should try this.
