Squirrel

    Anyone know how to cook-up a mean ol tree squirrel? A picture would be nice. I had my first one today (western gray squirrel) and it was great:tu:tu:tu

    I BBQ it with some seasoning and BBQ sauce. Came out nice and tender and juicy too.

    The original, colonial days, recipe for brunswick stew used squirrel instead of chicken. That would be a good start.

    Never ate a grey or fox squirrel but I have eaten the little red ones. After trying them a few ways, I found the best way to eat them was to simmer them in beer until tender and then cool the meat in the fridge before pulling it off the bones and putting into salads with pine nuts. The meat and nuts have nearly the same flavor but different textures that go well in salads with bitter greens and slightly sweet dressings.

    Soak it for a day, the southern fry with red-eye gravy and biscuts
    Or lightly pan fry then add mushroom gravy and bake

    put the little guy in a bed of sour krwt and bake til its :dvfallen apart

    Quarter them and fry like chicken. . . .

    season and brown them in a skillet. then put in a baking dish and cover with cream of mushroom soup and add some celery and carrots bake until tender.:tu

    The best squirrel I ever had was from a friend of mine that would take a mess of squirrels and crockpot them until the meat fell off the bones. Then he would cool the meat, dice it, and make it into squirrel salad (like ham salad, just using squirrel).
