steak recipes

    The local restaurant that features them marinates them pretty well, and I NEVER get a steak of any kind cooked more than medium rare. Theirs has always been pretty good, although the last time I was there, mine was a toughie.

    I buy ribeyes the whole slab and cut them in between the ribs, makes the steaks around 2-1/4" thick,

    after cutting, moderate amount not too much kosher salt rubbed on all sides

    leave on counter for at least 2-3 hrs so it is at room temp

    hottest grill you have, 650 degrees, cook 4 min. then turn 90 degrees
    cook 4 more

    flip and cook 4 and 4

    take off the grill at 16 mins let sit for 5 min and eat

    my best steak recipe.

    Re: Hanger steak...I agree that they can be a little tough, and need to be marinated. I cook mine a hair past rare and they are good.
    Try out a top blade chuck steak (called flatiron steak) next time. Besides a tenderloin, they are the most tender steak from the cow at about $5.99 to $7.99 a pound. Quality of the cut varies at different grocery stores, so watch for too much grissle line on the bottom side. If I get one with a lot of grissle, I take a fork and puncture the lines. I also marinate these for four or five hours with (believe it or not) Newman's Lite Caesar salad dressing with a bunch of garlic pepper and olive oil added. Cook these medium rare to rare...great "bistro" type steak.

    one of my pts that works for Texas Roadhouse told me how they make their steaks

    First you hv to "jacard" the meat....which tenderizies it

    hit it w/ their steak dusting on both sides

    sear on both sides quickly at high heat

    then move to side to finish cooking to desired level

    just before you take off grill hit it w/ melted garlic butter and serve



    mmmmmmmm good!!!!!
