What do y'all "marinate" your geese, ducks and venison in?

    Moonlight is just down the street from me......but the best BBQ here is Old Hickory...by far...no buffet though

    haven't been to Moonlight in years.....

    I purchased some Lupo Spiedies marinade. I like the Original and the Garlic Lemon. Goose I cut into cubes and put a skewer through them to cook them. Duck and other meats I try to use my Vacuum sealer marinade set to really flavor penetration.

    I think that Kraft Zesty Italian Dressing is the end all do all.

    We've used it on duck and venison with great results (about an hour soaking time on duck breasts or 3/4" deer steaks).

    I think the big key is not overcooking wild game... it needs to be bleeding.

    Dales. 30 minutes or less or it's too strong, imo. Dip in a mixture of butter, parsley flakes and garlic salt as you put on grill. Top with a reduction. 4 to 1 red wine to balsamic vinegar. reduce by 50%. Add either crushed berries and brown sugar or just some grape jelly. Reduce by 50% again.
