What homemade thing(s) am I missing?

    Hoping you guys have a suggestion or two. :)
    We make:
    • prosciutto
    • sausage (Italian sweet)
    • salame
    • pancetta
    • bresaola
    • coppa
    • gravlax (stupid simple to do)
    • tonno di maiale (have not made yet, but will be this weekend)
    • biroldi (not my fav, so haven't done in awhile)
    • testa in casetta (headcheese--see biroldi-although biroldi I might actually do again)
    • my brother has made goat cheese-again awhile back. If I could find a good cheese (of any type) recipe...
    • olives (my dad made these and I helped-haven't done,sadly, in awhile)
    • pickled onions
    • pickled cucumbers
    • homemade pasta
    • jerky
    • pemmican (been awhile on that, too)
    • pickled mushrooms (porcini, etc)
    • mushrooms sotto olio (in oil) see previous
    • pickled asparagus
    I think that I got them all. :yes

    Looking for 1-2 things to add that aren't smoked. Does not have to be a meat product, by the way. Just a homemade product. I have this nagging feeling that I am missing an entire class (or classes) of stuff.

    We have a garden and enjoy growing the ingredients to make homemade salsas, pickled peppers, marinara, etc. All can be canned and stored for winter. We also grow and dry herbs. Homemade herb blends make great gifts.

    We make tamales. :)
    Have considered andouille. Will consider it, again. :)

    I like to serve it as an appetizer split down the center, grilled, and then brushed with real maple syrup just before i pull them off of the grill.

    That stuff is like crack!
