Anyway I'd like more info on your contests- seems like you do more Whole Hog etc and as you said sweeter sauces--Well I've tried about all kinds of stuff- just made 4 Moose roasts for Pulled meat on Sunday and our Horse Club Christmas party-I guarantee- it will not be Baby Food---But then I also have a Mexican daughter in law.
For the Contests --Pork,... I cook alot of Game around the House.
So, What ya wanna know about the Contests.

You said you made 4 MOOSE Roasts. I've never tried it. What is Moose similar too?
To me after eating it as our beef for 25yrs-it tastes like Moose but it's not as dark as boo- cuts are larger than deer and more resemble Beef--one thing for sure it don't taste like Chix. Stop by some time and I'll let you taste some.
In texture it's like beef. No marbling. In taste, the best way I can describe it is beefier than beef; richer and with less tang than venison. Like SeniorCoot says, it tastes like moose. Whereas with my deer I trim every last speck of fat away, with moose I always leave some on, especially with the stew meat.
Like most game though it's the care after the shot that affects the product the most. I've had some rank stuff given to me before -- part of the reason I've stopped accepting gifted game that I haven't been personally involved in the packaging of.

Ya you do RC and so do most guys who hunt- I think it's the reward for spending so much time and energy/money in obtaining it- we will not waste it nor be sloppy in preparing it.
