What is your specialty?

    What do you want?At the age of 15 I inherated (sp) the job of camp cook.I am 30 now and I feed roughly 25 to 30 people throught the season.Down here that is a very prestigeous job to have at a very young age and I am very proud of it.

    It also beats splitting fire wood or doing dishes.

    The camps favorite is a deer roast cooked slow and on low heat for about 4 hours and a big pot of red beans,rice,and cornbread.They also like the smotherd teal and woodducks that I cook.They don't really care for the other ducks.They swear that they can tell the difference but between you and I they can't.     My most requested is what I call Batchellor Wraps: duck breasts wrapped around a fruit (jalepinos,mango,pineapple,pears,dates,figs,)then wrapped in bacon...marinated in a product called Daddy Hinckle's (original).
    Second is Smoked salmon...marinated in ,again...Daddy Hinckle's.

    Before answering I want to say I am an accomplished cook! I take a lot of pride in my cooking, and I work hard at it! My smoked ribs and pork butt are famous around here, and my homemade rub keeps people eating even when they are full!

    I make a goose gumbo that a cajun would kill his mother over. I make a pheasant and corn soup that will warm the coldest soul on those cold days afield. I serve doves on wild rice with an herby bechamel that makes women wet. I make a lasagna that off-the-boat Italians say is better than what they can get at home!

    But my most requested item? MY MOST REQUESTED ITEM?!?!?

    Spaghetti. :h
