What to do with hot peppers?

    Man you've got peppers already? I'm jealous. Have 20 plants, 18 of which are hot varieties.

    Let the cayenne's get nice and red and just start to dehydrate before picking and then just dry them out in a dark cabinet and store whole till ready to cook then crush one up in whatever you're making that could use a kick.

    I pickle a lot my bananas (do a search on pickled pepper recipes) but another thing you can do is Italian style bananas, fry them in extra virgin olive oil stuffed with a teaspoon of crushed garlic each and a dash of salt, fry well over medium-med/low heat till they’re flat and soft, hot ones are especially good done like this.

    I grill my jalapenos to accomany everything, sometimes with strips of duck or chicken and cheese stuffed inside of them.

    Habaneros I make Hot Sauce and can in half pints (I know you didn't mention them, but they're my favorite) :tu

    take the jalopenoes and cut the stem off ,use a butter knife to take out all the seeds ,then chop up a cabbage and stuff the peppers.can them with vinegar ,water,and 1/2 tsp. of course salt.

    Hmmm pickled peppers with cabbage inside...that sounds like something I might have to try...what does the cabbage do for it?

    Try sticking a habanero in a jar of bread and butters. Hot pickles! MMM!!

    A mixture of pickle and habanero relish is killer too! Gotta add a little

    sugar to get it just right. It's awesome on anything!!!!
