What to do with hot peppers?

    I smoke dry a lot of my peppers, especially the jalepenos. After they are completely dry, I save some whole for use in gumbo, soups, stews, etc.., the rest I grind in the coffee grinder to a fine powder and use in chili and such. Gives a real nice smokey flavor to all hot dishes:yes

    I always scoffed at hand washing, wearing rubber gloves, etc....until I tangled with fresh Habaneros...I cut up a mess of them last year and my fingers screamed like they were under chemical attack for 2 days...I thought I damaged nerves or something...handling contact lenses after peppers is a b!tch too, no matter how much you wash your hands. :yes

    I got this one off Foodnetwork.com. Its called Joe's Screaming Stuffed Jalapeno Poppers.

    1 or 2 packs of cream cheese
    2 to 4 cloves chopped garlic or granulated
    1/4c finely chopped sun dried tomatoes
    Chopped fresh basil leaves
    Pinch salt
    10 to 25 jalapenos
    Bacon
    Toothpicks

    Mix all the ingredients together
    I cut the stem off large Jal. and hollow out.
    Stuff with mix, wrap in bacon, secure with toothpicks and grill. :tu

    Aye, go and rub your eye after cutting up habaneros. We still joke my best friend regular for accidentally doing that, then screaming like a little girl.

    I would make hot sauce with them or cut 'em up into rings and freeze them for later use.
