    Canadas are very good. Think Top Sirloin. Specs are incredible-Porterhouse ;)

    goose: Snow/blue. never had a speck but heard they are great.

    duck: bills, cans, redheads, buffies, GE. They aren't considered a duck but I'd take coots over all of them!

    Not very sporting but if I had to feed a mess of ducks to a bunch of friends I rather start with a pile of ruddies than anything else.

    And, I make a heck of a good swan quarter bar-b-que.

    The legs and thighs are excellent. I still haven't learned the right way to cook the breast meat. Grilled hot and fast or jerky is, at best, okay.
