SP1187, does it leave it with a coffe taste though?
It's not fancy or exotic, but my Brother and I ground ours up with 20% pork fat, mixed it with brat or italian sausage cure, stuffed them into natural casings and it turned out really nice sausage links.
Here is something a little crazy.
Take a goose or duck breast, grill it until rare to med rare. Season with salt and pepper; eat it like a steak. A little a-1 is all you need. I love 'em this way.
Spanky, no it doesn't taste like coffee, but somehow the "gamey" taste is gone. I just made another batch, took it to the gun club and it disappeared!
