Convince me I need one. And which one? I've never seen one or been around one. What does it do that's better than other similar methods? I generally fry in cast iron.

First advantage is you will use less oil. Many foods just need to be spritzed with some olive oil, or even Pam type stuff. Other foods do not.
Basically it is just a small convection oven. Because it is smaller, it uses less energy, and cooks faster because it comes up to heat quicker.

'Drippy' foods don't work well. So if what you cook in oil drips all over the pan as you put it in, your pan might be a better choice. However, breaded foods work fine. Of course, you can forgo the breading, like in the case of chicken.

You don't need to spend a ton of money. Mid level brands work as well (generally) as the higher end options. You might give up things like a timer, or more space, but cooking wise, they are about the same.

Another downside is, counter space. If you have plenty, no issue.

We’ve got a ninja one. I’d suggest getting one with the double basket. We’ll do quick suppers sometimes when busy and if you do chicken strips and fries, you can only do one at a time. Wife talked about getting rid of the ninja foodie grill we have and gettin a double basket air fryer to go along with the one we already have

We started out with a small unit (1 serving size at a time).
Found the more we experimented, the more we used it.
So for a Family of 4, we next went to this.

which is more than just an airfryer.

when I first started, I would do chicken wings in instapot, pull them coat in sauce.
Then put in air fryer ( for crisping the outside for about 4-5 minutes, flipping halfway thru).

I now do the same when making Huli Huli chicken.

We now use it for all kinds of stuff.

I use mine a few times a week.
Duck comes out outstanding as does quartered chicken.
Handy little item.
This bull sprig came out crispy outside, rare inside, perfect.
Makes great "bar food" as well.

I have two, both Christmas gifts fun to use and experiment with but unless you have the kitchen space to leave one out on the counter you will rarely use it. Mine reside in the basement, I do like chicken thighs in them might drag one out.
