Appetizer for non-game eaters

    Hey guys, my wife has friends coming over Saturday night. Never met the guy, but the gal is a sweet gal and her boyfriend appears to be a decent guy....even though he's an attorney.o_O

    I'm cooking dinner. I'm doing some elk steaks, roasted red potatoes and some asparagus. I'm thinking of seared Speck breast like Ahi?

    Does anyone have a recipe or suggestions on sauces, rubs etc for a seared breast for appetizers? Thank you.

    Just a little salt pepper and garlic for the speck. No need for sauces.

    Steak em out. If I don't whole pick specks that's what I do. Never had anyone turn em down either.

    Ask him if he knows the difference between a cat fish and a layer? the answer is...One is a bottom dwelling mud sucker ....and the other is a fish!

    (This was told to me by a friend who is a lawyer.)

    I hear he is a Contract's Attorney....so not an ambulance chaser or defense attorney....

    Search for Brottboss's duck sauce recipe in the recipe sticky. We use it on just about all wild game, even spec.

    My waterfowl breasts usually get marinaded in equal amounts of olive oil and soy sauce, with ample amount of fresh chopped garlic thrown in.
