Costco has wild Sockeye Salmon fillets for $9.99 a pound

With Salmon season closed down, Costco has high quality, wild Sockeye Salmon fillets on sale for $9.99 a pound. This sale happens briefly each year so check out you local Costco to see if they still have any.
I am down to a little stash of frozen smoked fillet pieces, collars, and bellies from last year that I was lucky to put up.

Salmon (wild caught), Arctic Grayling, Walleye, Halibut.
If you are eating those, you are eating like royalty.

costco has wild caught sockeye in the frozen section year round. Individual wrapped servings. Been buying and enjoying these for awhile.

These Sockeyes are small delicate fish compared with Chinook.
In my opinion they are best baked, not barbecued, pretty quickly 5 - 8 minute @450 degrees with a thin coating of a sauce made up of; Mayonaise, caper, lemon, fresh dill, and crushed garlic to taste.
Lightly salt and pepper the fillets, coat with mayo sauce, set in fridge overnight or all day. Take out let it get to room temp, place in a parchment paper covered cookie sheet and bake.
The only other time I use a mayo coating like this is for Chinook fillets that have been vacuum packed and frozen for a while.

I have a little salmon left that I need to thaw out. Bought some costco salmon and barbequed last couple weeks, found it does better cooking cut into serving portions versus whole filet.

Best salmon Costco had was fresh Copper River Salmon. Haven't seen it the last few years.

Kokanee... Readily available at various locations throughout the state. Lots of fun to catch, and on par taste wise (in my opinion) with their saltwater brethren.
