My wife is leaving Sunday for a week's stay at the beach. I've been planning my menu for each day that she's gone. Certainly, one evening meal is going to be smoked sausage, sauerkraut and German potato salad. Another will be sauteed onion, garlic, mushrooms and olives over vermicelli. It takes a few days for the aroma to subside.

Hoagie roll with a brat, kraut and some of this stuff is standard summertime fare at my house. Probably eat it once a week.

All this talk of sauerkraut made me hungry for some GOOD kraut. Also have some venison ribs in the freezer. Dumplings in sauerkraut with ribs. Hope it works.

So I bought a kraut making kit (crock with weights). Three cabbage heads and Himalayan salt, simple for my first try. Supposed to make about two quarts.
I'll let ya know in a week.

Not necessarily “kraut”, but I do like this, especially with bacon added.

I prefer it without apples added.
