Take skinned breast halves, season with season salt, and thyme and tenderize the heck out of them with a Jacarr-sp? (knife meat tenderizer) Do this with both halves. Make sure you tenderize after seasoning. Sandwhich a onion slice with 2 halves, wrap with bacon and grill to med rare, I use gas grill med high heat 4-5 minutes per side. Im sure everyone has tried a variation of this but the meat tenderizer and onion do the job of covering the "liver" taste. Ive done this on all diver and puddle ducks, and candadians- My wife even like it, and my kids love them! My buddy came up with the concoction in Canada this fall and we ate them every other nite for 2 weeks straight. They go excellent with Labatts 50/50 or Labatts Blue!
