fried white fish recipe?

    Im tired of spending nearly a paycheck to eat at the fishetarian in Bodega Bay. But the cod fish and chips there is stupid good along with everything else. Does anybody have a decent recipe that mimics this kind of fry?

    Seriously, frying great fish is the easiest thing in the world. I much prefer panko over beer batter. Use a paper towel and dry the heck of it…the drier the better for frying. Dredge in flour (I mix a little Old Bay in my flour) drag it through egg, cover it in panko and throw that $-hit in oil until golden brown.

    And in Bodega Bay it’s better for lunch to hit Spud Point Crab Co. over any fish and chips…but to each their own.

    Flour, warm beer, baking powder, corn starch, old bay, salt/pepper.

    We did rock cod trip last month. We fried some up dredged in Panko and bread crumbs with bay seasoning, little garlic after dip in egg on the cast iron. When we got home, we did the same recipe in the air fryer. The air fryer was also very good and IMHO you tasted the fish more without all the oil from the deep fry. We were in Brookings and they did halibut fish and chips. That was the bomb at the highly rated cafe right on the water. Have to defrost some more for dinner.

    Flour seasoned with paprika, salt, and granulated garlic (or garlic powder)
    Egg and a beer
    Italian style panko bread crumbs with 1 part cheap grated parmesan cheese (Kraft) for every 3 parts bread crumbs

    Roll fillets in the seasoned flour, dip in the egg/beer mixture, roll in the panko/parmesan, then put in the frying pan. Make sure the oil is good and hot because if it isn't, the batter will soak up too much oil and you'll have a soggy, greasy mess.

    I've used roasted garlic flavored instant mashed potatoes in the batter as well and that turns out pretty good.

    Key to your fresh caught bottom fish, is to get EVERY pin bone out before you fry. Then, flour, egg, bread crumbs of choice.
