Ground duck

So, I just received a 1/2 hp carnivore grinder from Cabelas. I've never played around with one. Showed up yesterday and I'm going to break it out today and grind duck.
I'm thinking about a simple duck/bacon grind to make burgers.
30% bacon seem right?
Any tips? I do have the cold packs and I will partially freeze the meat first.
Also, I should keep it coarse? I visualize mush from duck meat if too fine.
I have a possession limit of birds and this machine claims to grind 5-7# a minute!

My favorite recipe for duck:
Coarse grind.
Mix with equal parts seasoned bread crumbs.
Make into small (2") patties.
Bread patties with egg/milk then flour 2x
Fry. I like them best with A1 steak sauce or chick fi-la sauce

Do not, do not fine grind, unless you are making jerky.

I don’t fail in the kitchen often, but one of my notable failures was finely ground duck/goose. Ended up as meat paste cake, rather than a meatloaf. It was not good

As far as additional meat, I prefer a cheap fatty pork butt. Easier to grind than bacon, and I think a better end product
