On the road, I like an Egg McMuffin pretty good.
At home, I make a 3 egg omlette with onion, green pepper, mushrooms, smoky ham and cheese with a liberal application of Tiger Sauce when finished. I saute the onion, pepper, mushroom and ham a bit before adding to the egg. I've got a handy dandy omlette pan that is hinged in the middle that allows for flipping the omlette to ensure cooking all the way through.

A pork researcher told me that 135 degrees is very safe for pork; it’s a really lean meat & dries out when cooked ‘safely’. Get a quality meat thermometer (I recommend Thermapen) and use it! Poultry should be cooked to 165, but not pork ( or beef).
150°-155° and held there for a bit makes for much better eating in my experience
Anyway you cook them.
Over easy usually 3 of em with hash browns bacon wheat toast and strawberry jam... that's my go to breakfast unless I'm feeling biscuits and gravy
